CHOCOLATE MOUSSE RECIPE WITH COLAVITA ORGANIC EXTRA VIRGIN OLIVE OIL - MASTERCHEF ROHINI THERAJA CHAWLA


Macerating the fruits

1/4 cup Colavita Extra Virgin Olive Oil
3-4 sprigs of fresh Rosemary 
Strawberries and oranges wedges chopped or any fruit of choice
Few rinds of orange peel 

Making the Chocolate Mousse 

250 - 300 grams best quality baking chocolate
150 grams of fresh cream (room temperature)
4 tablespoons powdered sugar
Vanilla essence 
100 grams whipping cream 

ASSEMBLY:-

Step 1 
Heat olive oil on lowest flame and add rosemary sprigs and orange peel. Let the oil get infused with the orange peel and rosemary. 

Let it cool

Once cooled completely, add chopped strawberries and orange segments. Let it sit for a bit and all the fruits will get infused with the flavors of rosemary and orange peels. 

Step 2 
To melt the chocolate, put it in a bowl over simmering water. Once the water starts to boil, turn off the stove. Keep stirring the chocolate as sits top the double broiler. 

Add fresh cream and mix. Take it off the heat and mix the cream and chocolate together. 

Using a hand blender, whip up the whipping cream till it’s fluffy and airy 

Add the chocolate mixture little by little into the whipped cream. 

Once all combined, using the hand blender whip again for about 2-3 mins to incorporate air into the mixture. 

Let this airy mousse set in the fridge for an hour or two. 

Pour into a choice of bowl or glass and garnish generously with the macerated berries and drizzle of olive oil in which the berries were macerating.
