Gazpacho with Colavita Extra Virgin Olive Oil

Try this twist to the authentic delicious Spanish gazpacho. Try this recipe by Rohini_T_chawla - it's light, its refreshing, its healthy, and yet incredibly tasty. Beat the summertime heat with this chilled soup made with seasonal produce and the best extra virgin olive oil from @colavitaindia to beat the summertime heat.

Ingredients:-

Half watermelon 
1 whole Red pepper 
2 Big ripe tomatoes
1-2 Thai red chilies or green chilies (depending on how spicy you want the drink to be)
1-2 stalks of celery 
Extra Virgin Olive Oil 
Splash of Red Wine Vinegar 
Salt 

Steps -;

  • In a blender add chopped watermelon, red pepper, tomatoes, chilies, celery, salt to taste, and blend. 
  • Add 2-3 tablespoons Colavita Red wine vinegar (depending on your taste for sourness (add a little bit and keep tasting)
  • Drizzle in 1/4th cup extra virgin olive oil and blend. 
  • Serve chilled and drizzle with Colavita Truffle oil on the top before serving
