Gazpacho with Colavita Extra Virgin Olive Oil

Ingredients:-
Half watermelon
1 whole Red pepper
2 Big ripe tomatoes
1-2 Thai red chilies or green chilies (depending on how spicy you want the drink to be)
1-2 stalks of celery
Extra Virgin Olive Oil
Splash of Red Wine Vinegar
Salt
Steps -;
- In a blender add chopped watermelon, red pepper, tomatoes, chilies, celery, salt to taste, and blend.
- Add 2-3 tablespoons Colavita Red wine vinegar (depending on your taste for sourness (add a little bit and keep tasting)
- Drizzle in 1/4th cup extra virgin olive oil and blend.
- Serve chilled and drizzle with Colavita Truffle oil on the top before serving
